I don't have Demon's, but I do have Dark Souls on PC. I'm already of the mind that now that I'm into the series, going back to Dark Souls will be a lot easier now.
The first encounter you can run right past him and go for the door. Afterwards I do think you have to fight it to get out, but this when you're equipped and such. So yeah maybe you're right and this one isn't totally skippable. The second encounter is definitely doable though.

I'm really far into this replay of DS1 myself and yeah, I'm going to say it's definitely harder all around and it's more cryptic, for better or worse. I wouldn't yell at anyone for wanting to look things up here and there for this one. Definitely a lot of "oops screwed this up until NG+" moments too...
It is worth noting you get the ability to warp around later in DS1. It's not for every single bonfire, but good enough. I totally forgot about that myself.

All around, DS2 is a lot more straightforward and didn't really have any head scratching moments for me. Demon's can definitely be cryptic but you don't have to worry about getting lost or backtracking much. I can definitely see myself possibly replaying DS2 most though or diving furthest into NG+. I think I'm dead set on getting the platinum, doesn't look too annoying for me to get at this point.
Also I gotta say, DS1 definitely feels like the darkest entry by far to me.
