Ultimately, the best thing to do is face your "fears" (though I doubt you would consider your habits as threatening or scary) gradually, looking at it as purely a physical task. Logically, it isn't difficult to refrain from changing the wording or organization of files. If it proves to be too much, try moving to a neutral, distracting activity- turn on the TV or read a familiar comic until you feel the stress slip away.
Indulging in your tendencies will make it worse, and you might find yourself slipping into other undesirable patterns/habits. Best to cut it off in the early stages.
