It's best not to look at college as a vocational training school or as a chance to get your start in some big money career.
1. You know what you want to do for a career, you've researched it, and you know that you need a particular degree (engineering careers definitely fall under this). In this case it is more like a vocational school, but every good program will encourage/require you to get more well rounding (my program required 12-15 hours outside my major in one subject, I did psychology).
2. You have a passion for learning and want to expand your horizons. This is more of what Dsh was talking about. Take the opportunity to explore the topics out there. If whatever you end up doing doesn't require a specific degree, just any college degree, then they're looking for someone who has a work ethic and knows how to learn.
