Mine is 158 and I can't seem to get any higher

The best trick I can figure out is to try to hit it when it's moving to the right but still as far to the left as can be reached.

Ha! I discovered the trick. Try to hit it only with the tip. Now I've managed to reach 164 or so.

I don't know how they programmed it but I think they went for semi-realistic and it registers some kind of measure of relative impact speed to determine how much damage (and candy) you get.
The maximum linear speed of the stick is indeed at the tip. But the point is it not just the tip timing, you also want e.g. as was mentioned above, to hit it when it is flying into the right. The maximum speed of the pinata is when it is at the bottom of its swing, so I think the sweet spot may be a bit off if you just try to get it with the tip.
