Definately Cowboy Bebop. Ed is hilarious. Awesome show in everyway. Samurai Champloo is done by the same group/producer and is good too, but a bit cliche IMO. Anyone else sat through the entirety of Legend of the Galactic Heroes? It's absolutely phenomenal.. Of course the animation is sketchy, this being an old anime, and the characters tend to get lost in monologue quite often, but the show comes highly recommended nonetheless.. More info

here. At 110 episodes this show is quite epic! Wolf Brigade is another film that has a mature storyline set in an alternate post-WWII universe.
Oh and I did find the anime bits in the Animatrix enjoyable. And if you happen to like Hitchcock don't miss Perfect Blue!
