My personal favorite series include:
Afro Samurai
Cowboy Bebop
Ergo Proxy
Fullmetal Alchemist
Ghost in the Shell SAC (+ 2nd Gig)
Hellsing Ultimate
Samurai Champloo
I've tried watching about twice this amount, but these are the only series that I finished. I would suggest Fullmetal as a jumping off point. This was the only anime that my wife watched with me, and enjoyed it probably much more than I did. It's a great story with pretty universally identifiable themes.
I watch the dubs, too, unless I first see an anime with subs. Either way, whatever I first hear, that's what I stick with. I'm much more particular about watching subtitles for my live-action foreign films.

Lots of good recomendations.
Definately Cowboy Bebop. Ed is hilarious. Awesome show in everyway. Samurai Champloo is done by the same group/producer and is good too, but a bit cliche IMO. I like feudal japanese films but as animation it feels like something is lacking. Still very enjoyable. I didn't really get into any other series though, after watching Bebop I think I just expected too much and nothing was nearly as good. Tri-gun is ok I suppose....
Now there are tons of great films out though...

Ya know a show that totally aged well? Iria. Unlike all the other shit I used to enjoy, and now despise, I watched that one recently and it was pretty good.
Oh and the old Fist of the North Star movie. Pretty much the manliest animated movie of all time. It's still amazing. I can't believe Netflix doesn't have it.

Grave of the Fireflies is excellent if you want to see what "serious" anime is like. It's a very mature, adult movie that is not just great anime, but a great movie period
Also, you need to try some Miyazaki. He is very well respected by anime fans and even people working for Disney. Try Princess Mononoke
