I don't really watch anime that I haven't already seen before anymore, but I've been re-watching the Jinzou Ningen Kikaider OVA recently. It's kind of coincided with the beating of a lot of the original Rockman series of games that I've done recently, and I've realized that the original Rockman series probably took some heavy inspiration from Kikaider.

As somebody who isn't a huge anime fan and doesn't really know much about anime, do any of you have suggestions for shows I might like?

Hmm, I suggest Samurai X and Rurouni Kenshin.
How is Rurouni Kensin? I've always wanted to give it a shot, but never got around to it.
Love it! Saw the live action movie too. It was good as well.

It's on Toonami too! You only have to catch up on two episodes if you want to watch it on there.

To add to an already long list of suggestions...

Fullmetal Alchemist: Brotherhood - There have been two FMA series. The first one was done while the manga was still in the earlier stages, and branches off into a second half (at least) that was made up to give the series an ending. Years later, as the manga was coming to a close, they made Brotherhood, which follows the manga faithfully to the end. While both are good, Brotherhood is better.

Also, Hellsing Ultimate was already mentioned, but that series also has an "original" anime series that barely follows the manga at all...and Ultimate, which far as I know, is very close.

Samurai Champloo - Cowboy Bebop shows up a lot, and for good reason. Samurai Champloo is by the same director, and really, if you like one you'd probably like the other.

Soul Eater - It's been mentioned, but, this would be a good way to scratch the shounen anime itch, instead of jumping into Naruto, Bleach, or something else with hundreds of episodes. While the manga is ongoing, the Soul Eater anime wrapped up in around 50 episodes of nicely animated fight scenes/etc.

Claymore - Solid action anime that doesn't differ wildly from the manga until the last few episodes, making it easy to transition to that if you want more.
Stylistically, it bears some similarity to Berserk.

Evangelion - Tends to be very polarizing, but it's hugely influential. I'd say to check out the recent movie versions, and to go back to the series and original movies if you really like those.

Attack on Titan - This is a currently airing series that's been solid so far. It's an easy one to point out when people start complaining that all that's coming out is moe slice of life anime

Anyway, there's soooo much that could be dumped, but there are a few more anyway that would likely fit into the general appeal/action-ey category.
To second/third some suggestions - my brother, who had never watched anime much at all, stayed with me when he came back to school. He tore through Black Lagoon, Death Note, Trigun, Soul Eater, Hellsing Ultimate, and High School of the Dead (offhand).

Thanks for all the recommendations guys. Think I'm going to try Cowboy Bebop, Soul Eater, and Berzerk to start.

My friend made me sit through all of FLCL today. That was interesting.

I honestly 100% enjoyed the original FMA way better. The story was much more solid as were the characters.

Evangelion - .... I'd say to check out the recent movie versions, and to go back to the series and original movies if you really like those.
A similar thing could be said for Cowboy Bebop. The movie is essentially one long, extended episode and a good starting point if you're not sure it's something you'd enjoy.

Others have made some very good suggestions, but I thought I'd add a couple other suggestions that haven't been mentioned:

Ghibli films - If you're looking into anime, these will come up a lot. Most of them have a distinct vibe to them, but they do cover a couple of different genres. Most of them involve action and adventure of some sort (Castle in the Sky, Porco Rosso), but also incorporate fantasy (Howl's Moving Castle, Spirited Away), historical elements (Princess Mononoke), or are strictly drama (Whisper of the Heart, Grave of the Fireflies). If you're at all interested in any of them, I'd probably start with Nausicaa. It's a great action/adventure film and contains many reoccurring elements that show up in other Ghibli films.

The Castle of Cagliostro - This might be cheating a little, as Miyazaki worked on this as well, but it's not technically a Ghibli film. It's a splendid mix of action/adventure/comedy featuring Lupin the III, though you don't really need to know anything about Lupin to enjoy the film.

Akira - I'm kind of surprised no one has mentioned this (unless I skimmed over it.) If you're at all interested in action and cyberpunk/sci-fi then this is what many would consider anime's flagship film of choice. The animation quality here is also exceptional to the point where you'd never guess it was made in 1988.

Satoshi Kon - This director worked on a lot of interesting films from the psychological thriller Perfect Blue, to the mystery/scifi/Inception-like Paprika, to the drama/docu-style/romance that is Millennium Actress. They are all visually impressive and will probably make you want to watch them again to pick up on the more subtle hints that you know you probably missed the first time around.
