Hmmm... hard to say. I would keep my PS3 and my PS2 for sure. As for a 3rd console, my RetroDuo. Yes, it is 2 consoles in 1, but I only use the SNES.

Well, if only allowed to pick from the systems I own now: PS3, PS2, and PC.
But in an ideal situation where I could replace my current PS3 with an older backwards compatible model: PS3, PC, 3DS.
My 360 and PSP are the only two that would be "easy" to get rid of. Because most of my PSP games are remakes of PS1 games that I could get off of PSN on my PS3 (Albeit inferior versions, but I can put up with that if the alternative is not being able to play them at all.) And again, most of my 360 games are multiplatform on PS3 as well. I have like 6 exclusives for that system, and the rest are just titles where the 360 version has some kind of advantage over the PS3 one. So I could easily re-buy most of my 360 collection on PS3.

There's no way I could tell you what consoles to keep, because everybody has different taste. Your favorite games are not my favorite games (I would never keep an NES). So instead, I used this to challenge myself. If I were to move back home and had to cut down on systems to save space, and sell the rest to make back some money, these are the ones I would keep:
Retron 5: This handles most of my classics. I know it's kind of a cheat, but the point here is to save space. This also lets me continue playing GBA games if handhelds count. (which they don't)
PS3: I'd keep my original backwards compatible version. The PS2 library is just way too huge to throw out. Mix that with some modern games and PSN and you have all the gaming you ever need.
Dreamcast: I kept trying to find reasons to not add this to my list, but personally I just can't. This has easily become my favorite system of all time. Haters gonna hate.
I kept trying to fit the N64 in, but just couldn't do it. When I think of N64, I think: Banjo-Kazooie, Zelda: OOT, and Space Station Silicon Valley. There's not enough games that I enjoy to keep it.
Saturn? Still haven't gotten a working console I can play. This is still a childhood dream that has not come true, so there's no way I can say it would be in my list.

I'm not counting handhelds, because they can easily be thrown in a drawer somewhere. Not including hand helds is a craven move. Aside from that, consoles are really not that much bigger than handhelds. You could fit most consoles we're talking about in a drawer (at least the ones I have).

Handhelds don't have to be set-up in front of the TV like consoles do, nor do they require a lot of space for their games. My PSP is loaded with games on it's MS DUO and is often gets lost because I set it down in some random spot. You could always just store away the consoles that you don't use in nice and neat containers. I don't keep everything hooked up since I think it's incredibly cluttered with tons of wires and systems. The same goes for games, it is all about being organized and space conscious.
Similar to you, I take up a bedroom in our 3 bedroom condo but I was clever with the space and made it an 'entertainment' room and multi-use. It is not strictly for gaming and therefore my wife can enjoy the room for movies/3d as well as having a space for real computer work.
I found the compromising point by being able to have a space to express myself as well as a place to spend time with my wife and my daughter. I am truly grateful that my wife supports my gaming hobby. She understands that the actual gaming and collecting aspect of it makes me happy.
I think hobbies define a person in many ways and can make them interesting and varied as individuals. IMO, there are more important things to compromise about. Sorry for the long post, but just some ideas from a married man.

Only having to choose three is pretty hard. I see a lot of people have chosen options that allow for emulation/multiple systems in one. I would consider that owning a PC of some sort is a given, so I wouldn't even include that.
If I had to choose today, right now, I'd pick the 3DS, a Wii and a PS2. Between those three there's enough to keep me entertained for the rest of my life.

If we're going based on what I currently own (ie, only the games I have as of now). I'd probably go PS2, Dreamcast & Wii (backward compatibility).
If we're just going by strictly potential library with no backward compatibility , I'd probably go PS3, PS2, & Dreamcast.
Assuming there is no PC allowed.
