Get Twilight Princess, 4 Swords Adventures, the LOZ Collector's Edition, and the Ocarina of Time plus Master Quest games. Oh and yes to Eternal Darkness too. I had that in high school, but like most people, I traded it in for cash at Gamestop (along with Gauntlet Dark Legacy, which while awesome on the 'Cube, is also on other platforms). I wish I never got rid of it because it was (and still is) different than most video games I had played at that time.
Soul Calibur II, while multiplatform, has an extra character exclusive to each console version. Gamecube version has Link. I too am also thinking about getting Wave Race Blue Storm, mostly because it's cheap.
I'll also echo the sentiment of a few others for Super Smash Bros Melee. I have mostly played that game by myself (seriously, I've put 41 hours in the single player modes alone and I still enjoy it, because there's a lot more to do for single player than in the original Smash Bros for N64. In fact, just mentioning it made me do a quick battle on vs mode against 3 computer opponents, and that turned into about 30 minutes of play time.
