I cant remember exactly what was first for me mortal combat, streetfighter 2, and samsho 2 were all about the same time for me. The one that stands out to me the most is streetfighter 2 on snes mostly because me and my brother had this joke at the time...
keep in mind im only 19 now so at the time i was quite young but would anyone know what im talking about if i mention Bison doing a "flying salute" its a basic attack by bison that for some reason was dubbed "the flying salute" to me and my brother. We thought it was hilarious. theres my bit of fighter sentiment for yall.

Street Fighter II: Special Champion Edition on the MegaDrive. My mates and I would gather around the MD and have competitions, little tournaments of our own. We had a leader board and everything! :D

Street Fighter 2 (snes)
Got it for a bday. I was young so a button masher.
I remember my mom trying to help me beat the game on like the easiest setting it took us a whole day....
She was an RPG only player for the most part so it wasn't much help....

For 3d it was virtual fighter, It was at a gas station from what i remember. All i wanted to do was pick the ninja.

Sam Sho II, for me, the graphics at the time were amazing and the weapons combat was just totally different, I've come to appreciate the SF series over time, but in the early 90's the game that first got me fired up for fighting was definitely samurai showdown II. I still love playing a cheap as ukyo on my neo against my friends.
