And never two hand the Dragon Bone Smasher.
Actually, I never used parry in either game and got along just fine. And in Demon's Souls, if you have a lot of stamina, a giant shield can make you pretty much invincible against normal enemies or phantoms. The Giant Purple Flame Shield can be used to completely cheese some of the more difficult black phantoms like Satsuki.

Also I had a build that I dual wielded Dragon Bone/Keel Smashers with.

Why would there be an Easy Mode?

You get used to the difficulty as you learn you battle tactics, its a hard game because you lose your souls (xp) and have to regain them or if you die before that you lose the xp for good. I think the difficulty is balanced tho,
If you can see the future while remembering the past, you may just have control of the present.

Dark Souls is exactly what new Castlevania should have been in my eyes.

Alright I'll give some actual advice. In demon souls it's probably best if you start a character just to get used to the gameplay. Die as many times as you need until you feel you understand the game then start another since you will know the layout of the first level and how to play since the more you die the harder the game gets.

I havent played Demon's Souls or Dark Souls, but after watching a "Lets Play" of Dark Souls and all the people talking about how difficult this game is and it seems like there is so many people "giving pointers" and if beating this game on average takes 50 hours, i just dont think it's as difficult as people are saying.

Makes me really want to play it and give it a try to prove these people wrong, also if you can beat Dark Souls, then any challenging NES game should be cake, right?

For me the dificulty comes from the combat, in witch you have to be very precise and quick with your movements and learn the enemy attacks also a lot of the enemies do a lot of damage and some bosses have 1 hit kills. In dark souls you get little help on how the camera moves changing weapons just the basic, the rest on magic, upgrading weapons is up to you to figure it out. Not sure if is THE hardest game of all time but since hard games are allmost non-existent these days i can see why so many people enjoy it.

I like the game but not at the same point were "it ruined other videogames".

In a personal note i try to not see any hint or video on internet since i feel it would ruin the expirience of learning it yourself.

Ditto, I've only briefly skimmed over some videos of 2, but I can tell this is just one of those series where it's best off tuning out everything around you online and all, and just soaking in the experience by going in blind.

Do it. It's not that hard.
