Every one calls things by slightly different names, but I usually get boneless/skinless chicken breast. What I call chicken cutlets. Egg them, bread them, then fry them in oil (vegetable, corn, canola, etc). Delicious. And left-overs work really well for either cold or hot sandwiches, or just reheated for a second dinner.
My favorite bread crumbs to use is the original 4C Seasoned Bread Crumbs, although when I use them for chicken cutlets I usually spice them up a little. I'll mix in a good amount of garlic and onion powder, and maybe a few more parsley leaves. If I have any kind of grated cheese in the house, I'll add a little of that too.
Or don't egg/bread them, depending on the rest of the dinner. For example, for a pesto sauce, soak your chicken in balsamic vinegar then fry them without any breading.

What about a small out door grill like this that you can bring in and out? I have on like this for camping I used when I lived in an apartment. You can get nice little charcoal grills like this too, but the smoke might give you away.

^An electric Coleman might work...But you don't really "grill" with electricity.
My experience with apartment managers is that they don't care if you break the rules as long as it doesn't cause them to have to lift a finger. I grilled out all the time back at my old apartment and never received one complaint. Then again all of my neighbors and I got along, and I also got along well with the staff.

Well of course grills are usually not allowed because so many people are freaking idiots and burning down 5 neighbors because you don't know how to handle fire and don't put it out afterwards is usually frowned upon. Most apartment patios are kinda small and the heat from a decent sized grill will be a danger too.
