My Japanese language professor insisted that only hands should be used for sushi...but I have seen Japanese people using chopsticks to eat it in Japanese films. Does anyone here know which is correct?

It might be a social thing. I used to dine with Japanese businessmen, and they only used chopsticks. Awww...they are so cute!

That's what I used to do...but our professor - who was quite old - polled the class to see how many of us used chopsticks to eat sushi. When the majority of us raised our hands, he looked at us like we were crazy and told us to never, ever do that again. I think the professor is on the level. The hands only approach is easier for Sushi, go for it. Sushi or Sashimi? I was raised to eat Sushi with your right hand only. If pleased, you order and share a glass of hot sake with the itamae, and the glass must be held with both hands during the toast. Proper etiquette (dammit. First time in days I had to pull out the dictionary to make sure my spelling was correct) also says to not use any condiments on your sushi, but using a cleanser is fine if you are going from one type of sushi to another.
Sashimi is a fish of a different color. Always use chopsticks, drench in soy sauce if you wish (gross).
I could be wrong, but that's how I have always been taught to eat sushi and sashimi, and I can guarantee the itamae's appreciate a few shots of sake (If allowed. If not, inform the manager that it is considered an insult to not share a drink).
