Now if only there was a way to get the GC version online via the Wii's online system. Seems like it shouldn't be that tough, but I would have no idea how to go about it.

Not possible without major hacks. When you fire up a Gamecube game it goes into Gamecube mode and disables all the fancy parts of the Wii. Personally, I just go back to Blue Burst when I need a hit of PSO. Mostly because I can get it fired up in the shortest amount of time, and because I can setup a lan server on it and we can play it throughout the house.
