Hockey: NHL 94 (Genesis)
Baketball: NBA Jam T.E. (SNES) but NBA Live 95 (Genesis) if were talking simulation.
Soccer: FIFA 95 (Genesis)
Baseball: I'm not sure about this one didn't play a ton of baseball games but I know R.B.I. baseball for the NES is pretty loved.
Boxing: Punch Out (NES) - Don't really know any simulation based games for boxing.
Other: California Games (NES)

You can do better than RBI Baseball. Try Baseball Stars.
No golf? Pebble Beach Golf Links on SNES/Genesis is pretty solid.
Track & field is my favorite real-life sport, but most t&f games of that era were just button-mashers.

I'm not a sport guy either, but I played a lot of sports games in the 8-bit era. The gameplay was so simple that you didn't need to be a sports guy to enjoy them. Double Dribble I played a lot, and Blades of Steel, Tecmo Bowl, and Super Dodge Ball.
NBA Jam may be the best 16-bit sports game period for me personally. I just loved the aggressive gameplay. Shove a guy to the ground, take the ball, and set the hoop on fire. T.E. gave you even more offensive options.

I agree. I don't really play modern sports games because they've become so complicated. If I'm going to play sports games I stick to the classics.

Blades of Steel for the NES. I don't play sports games, but I'll play this and even enjoy myself doing so for short periods of time at least.

I'm not a huge sports fan in real life, but for sports games that I enjoyed from that era (and still do for the most part), I'd pick:
Super Spike V'Ball
Super Dodgeball
Mutant League Football
Mutant League Hockey
Saturday Night Slam Masters

Ken Griffy Jr. Presents Major League Baseball on SNES was pretty good. This was the game that came with my SNES. Baseball Stars is my favorite on NES.
Ken Griffy Jr.'s Winning Run was alright. It was in the same type of 3D as NCAA Basketball and NHL Stanly Cup on SNES, which were both decent.
