VCR doesn't have many options, Other than a high end deck paired with an upscaler. The actual video track of VHS tapes is based on composite.
N64 offers svideo directly for NTSC models. PAL is a trickier to find the suitable cables or something.

Just buy an N64 s-video cable and you're good.

For NTSC, same s-video cable for SNES/N64/GC.
