Will this work for Composite to HDMI?

Start from RGB for Genesis, Saturn, and Nomad best results.

Upscaling composite video where avoidable isn't recommended.
You'd be magnifying a lossy image format that already contains artifacts in the first place.

My advice; don't buy cheap converters/upscalers like RGB to YUV or other chinese equipment. They're not really worth the money.

Either use RGB on your plasma as suggested by Lum or buy a XRGB-3/XRGB-mini Framemeister. I have the XRGB-mini and the Genesis looks absolutely amazing. No distortion or artifacts. Just an incredibly sharp 1080p picture with optional scanlines (to sort of mimic CRTs)

That is what I'm looking to do, but $400 & up for an xrgb is too pricey for me. Is there anything cheaper that is similar?

Wii also will play NES, SNES, Genesis, etc in 240p. You'll probably need to put the Wii in 480i mode for it to actual switch over to 240p for VC games though. Otherwise it scales the resolution to 480p.

Or, if you use emulators like FCE or Genplus, those will output in 240p if you switch the resolution to "original"

Then you can even play Sega CD games in 240p via component. Looks fantastic.

Hook up your Wii via component cables, set your Wii's video settings to 480i, and then just try to play a few VC games.

If you don't have any problems, you're good for 240p.
