my confusion is this - is there some order you must shoot the colors, or what?

There's no order you MUST shoot them in, but white ones have to be shot with rapid fire, and red ones have to be hit with shikigami attacks. Getting rows of the same color will destroy them tetris style.

Also: Shoot the core!

Very nice run. Looks to be about the same path I take with Kim on that stage. That last set of blocks before the boss is the hardest spot IMO.

That part is a bitch. I usually take out at least two of those guys, but my timing was wrong and I only killed one.
