Nah. I've been making corned beef, albeit store bought, that rivals anyone's homemade brisket. I have friends who used to hate corned beef until they tried mine. I will be a corned beef braggart on this one.

I think the main thing is how you cook the beef. Most people I know boil it, which is just wrong. I take a large glass baking dish and fill it up with about an inch deep of water. Place a rack on that, but the corned beef fat side up on that, cover with foil and bake at 350 for 45 per pound. Then, turn the broiler on, remove foil, and cook for an additional fifteen minutes. Corned beef heaven I tell ya.
I'll have to try that. I've always had it boiled.

It will knock your socks off.

Be sure to make sure that there is always water in the baking dish as you may have to add more after an hour or two. I always add pickling spice to the top of my brisket as well, which adds a lot more flavor. The best part about cooking it this way is that it's very hard to over-cook. It just gets more and more tender.

I'm already looking forward to having a reuben for lunch.

Corned beef hash with poached eggs last night. Comfort food at its best.

Home made pizza from scratch tonight. I wanted to go the margherita route, but my wife pointed out we have porcini mushrooms and leeks in the fridge. Veggie pizza it is.

Im eating instant butterscotch pudding that we were going to have for desert last night but apparently my wife doesnt like butterscotch pudding. Why she had it in the cubbard when she doesnt like it baffles me.

Butterscotch pudding is totally my fave. Your wife needs her head inspected.

I just nailed a bowl of cashew maple granola. It was pretty good, if not a bit too sweet for a breakfast cereal.
