I also really enjoyed Suikoden V.
The First PS2 RPG I played is Okage Shadow King, So that game has a place in my gaming history.
Also the first Final Fantasy I ever beat was X. Really enjoyed that one too.

FFXII, Suikoden 3, DQVIII are probably my top 3 on the system.
Grandia II and III and the Growlanser II and III are great as well.

FFXII is pretty great. Playing DQVIII at the moment. The mechanics are the same as any other DQ game, but it looks great!

Turn-based RPGs: Suikoden III, Shadow Hearts series, Dragon Quest 8, Final Fantasy X (tho the characters can get annoying), Ar Tonelico
Action-RPGs: Devil Summoner (sorta ARPG), Baldur's Gate Dark Alliance, Champions of Norrath, Tales of the Abyss (sorta ARPG), Bard's Tale

I'm starting to realize there's a lot of RPGs on the PS2 that I haven't played! I didn't care for Persona 3 and haven't played 4 yet. Didn't care for Suikoden IV and haven't continued on with Tactics or V. I'm on the fence about Tsugenai Atonement. It's an interesting concept but is a little boring. Dark Cloud was fun but the weapons break, which is a big turn off for me. And the dungeons are bland too. I didn't like Disgaea as it didn't really feel like a strategy RPG but I didn't really play it past the tutorial. Something about turning different squares different colors? I couldn't even figure out how to play it, to be honest. I have a low tolerance for games that try to completely reinvent the wheel. Final Fantasy XII was ok even tho the game centers around the most useless and annoying characters. But after awhile I just stopped caring, mainly b/c I spent more time doing the hunts then following the story, and I had no idea what the hell was going on.

I like anything that says "Shin Megami Tensei" in front of it. These are some of my favorite RPGs of any generation, with Nocturne and Persona 4 highest on the list.

How's Bard's Tale on PS2? There usually aren't any proper (read: not dumbed down aRPGs) WRPGs on consoles, atleast before the current console generation (with the exception of few games like KOTR anyways)
Did you try FES? The PSP version of Persona 3 is better than the original, I assume it's the same thing with Persona 3 FES

Bard's Tale is not anything like the original game. It's an action-RPG with a lot of humor. The gameplay is typical of the genre, it's just the writing that elevates. I enjoyed it for it is.
And yes I played FES. I don't think it adds a whole lot, besides stuff I'd normally not even notice if it was gone (in the way the Director's Cut of Silent Hill 2 adds things). Could be wrong tho. But yeah, I didn't really care for the game. In some ways, I liked the dating sim aspect much more than the RPG dungeon-crawling sections, which I found to be ultimately tedious. It's one of those games were you just wish it was half as long and with way less padding.

These are some that stuck around my collection for sometime,
Gladius-(SRPG) Gladiator themed, very deep, addictive and fun.
Growlanser Generations-(SRPG) 2 games are included in Working Designs last game ever!
RPG Maker 2 & 3 (RPG Editor tools)-Depends on your patience and eagerness to dabble. Nice possibilites to create which is cool!
(Xseed Fan club, biased opinion for sure alert)

-Ys Ark of Naphistim (non-Xseed)
