Thanks for all of the recommendations so far guys! Lots of games to look into now.
If there's any more, let me know!

I second Final Fantasy Adventure. If you can read Japanese, Star Ocean: Blue Sphere is a must.

Ah yes, Blue Sphere has been a game that I've been interested in for the longest time. Is there at least a fan translation for that game? I'd love to play it one day.

Someone's working on a fan translation right now. It looks rather poor, but it's unfinished and hasn't been edited yet. Working with a GBC game means there are a lot of constraints, so maybe he's just trying not to waste words. It's a one-man project, but at some point it will be in English

If you're only interested in the story, it looks like there was a doujinshi manga. Really nice art! It's supposed to be faithful to the game, but how would i know?
And here's a nice scanlation.

I've always been a fan of old school dungeon crawlers like Shining in the Darkness and Shining the Holy Ark. If that hits your mark, try Sword of Hope and Sword of Hope II, travels like Shadowgate and Deja Vu, but has a decent RPG element to it.
If you aren't having a good time, why are you playing?

Re: Know any good GB/C RPGs?
My top three have already been mentioned here:
Lufia: The Legend Returns
Survival Kids
Revelations: The Demon Slayer
All for Game Boy Color, though I believe Revelations and Survival Kids are black cartridges which can be played on Original Game Boy and Super Game Boy as well.
Dragon Warrior III is also a good pick, much better than the NES original. I also enjoyed Final Fantasy Adventure (I just finished it in fact), though it's definitely very dated and cryptic. Make sure you have a walkthrough and maps handy for that one.

Already own Dragon Warrior III.
I'm a big fan of the series, so I own a lot of those games.
Survival Kids is one of those games I remember reading about in Nintendo Power years back, and made a mental note of but never obtained a copy.

Just wanted to say thanks again for all of the great games, everyone. I ordered Metal Walker CIB off eBay a couple days ago and got it today after I got home, so now I've got yet another a new game to look forward to. I'll be sure to look into these others as well in due time!
