Best PS2 RPG's?
I'm going to 3rd Tales Of The Abyss...that game made me want to play the entire Tales series, awesome gameplay, story and characters. It was so entertaining that my wife wanted to play it with me..which really is saying a lot...
More recently I played through
Growlanser - Heritage of war : This starts off so boring I almost didnt bother..once I got into it though, I loved it.
Atelier Iris 2 and 3 : Both were a lot of fun, though not quite as involved as most RPGs..I have 1 but didnt get a chance to play it.

Also, some of the things they did in that game were brilliant. Some people have criticized the story, which is a bit lacking, but I like that it takes itself seriously and avoids much of the cheese from previous FF games. This isn't "Spice Girls Big Adventure" like FF X 2, and there are no cliche, spiky haired, angsty heroes who carry monstrous sized swords to hide their feelings of inadequacy
Final Fantasy XII! Just buy it, play it, and be done with your RPG search (if you have already played all of the Shin Megami Tensei games). It's the first FF game that actually immerses you in a world that doesn't revolve around you saving everyone from some ridiculous, ultimate-evil bad guy.
Also, like Gamerforlife points out, realistic characters with realistic interactions (no emo plotlines). Aside from maybe Fran, no one dresses like a cheap hooker and no one has a really bad case of DBZ hair. Traditional JRPG stereotypes are avoided, so some were put off by playing a semi-original FF game.

i don't think anyone has mentioned suikoden. ps2 has suikoden 3-5 and tactics. i haven't played a bad suikoden game yet.
you can't go worng with the shin megami tensei games: devil summoner, digital devil saga 1 & 2, nocturne, persona 3 fes, and persona 4 is supposed to be released in december (i think) on the ps2
and if you like tactics type rpgs try disgaea, phantom brave, and lapucell tactics.
and a couple other no one has mentioned, jade cacoon 2, stella deus, steambot chronicles, metal saga, wild arms 3-5 & alter code f, dawn of mana, radiata stories, arc the lad

Nobody didn't mention any of the Shin Megami Tensei games?
I would recommend Digital Devil Saga 1 and 2. Great dark story line, graphics, and a traditional magic system.

Shin Megami Tensei: Nocturne is sad that you didn't mention him. The combat system is the same as DDS1&2, but it has the awesome demon recruitment and fusion. Over time you can build up an excellent party of monsters to do your bidding.
Plus, it has Dante from DMC2.
