I finally remembered. :)
This is Banjo-Kazooie running in Project64 using the Glide64 video plugin and a hires texture pack.

I've never tried modding an emulator before, but it looks like you're getting some pretty good results because I don't remember my N64 ever looking that detailed. It's not full of fog either, can you expand your FOV with that plugin?

I believe the drawdistance and stuff is still the same as it would be on a N64. The only thing I can do with the plugin is disable the fog. It's amazing how much better games look fogless. Sure there's some pop up once and awhile, but I don't see that as a big deal. Makes you wonder why they used the fog in the first place.

It masked the draw distance, IIRC. Anyway, yeah, N64 games look surprisingly good on an emulator. Just goes to show how much more powerful the N64 was than the PS1.

Worst map in the game (also ugliest), but was able to snap it with the huge hangtime I had. Going for the grab. 8)

SM64 with no fog. Notice there are goombas and such that should be in the distance but they aren't there. In my opinion the effects of the short drawdistance aren't a big deal. Nintendo's fog idea essentially made a mountain out of a molehill.

Maybe the fog helped control the framerate?

I wonder if the Zelda's would look good without it. I think it adds a lot of charm in a lot of aspects for those games. I know there's tons of high-res work going on with those games though, but I'm pretty behind on them. Been meaning to catch up ever since I got this new PC since maybe it'd be able to handle N64 emulation...
