Do real Wii s-video cables exist?
I need some Wii s-video cables but I'm not sure if the Wii system itself supports true s-video. I've seen Wii s-video cables for sale, but are they like cheap SNES s-video cables where they just derive it from the composite signal offering no improvements and sometimes even looking much worse than composite?

I don't know about S-video, but I've got component cables that work great, and with some games (Red Steel 2 and Conduit 2 are the first two that come to mind), it offers noticeable improvement over the composite cables.

I did a quick search. Pinouts show that the NTSC Wiis output S-Video. Also, this thread is useful (there's even a reply from Nintendo that some one posted)...

We'll assume that Redifer knows component is the best choice, but can't use it for one reason or another.
With a quick Google, apparently you can't get official S-Video cables here in America. I don't know if they ever made them. But apparently JPN official S-Video cables exist, so maybe you can import one if it's not too expensive.
I would definitely stay away from the ~$5 cables, I'm sure they're not worth it. I checked fast on Amazon, there's seems to be one or two S-Video cables that don't look too bad. Unless they're just gilded.
You can actually check a cable to make sure it's not coning you with a composite signal. You need the pinout (Google) and a multi meter.
Do we have any members here that are currently located in Japan? We use to have go-to guys for getting stuff from Japan, I don't know if we still do. Anyways, if it were me, and component definitely isn't an option, I would either try to get official cables from Japan (if they're not too expensive to import) or try my luck with the best looking pair you can find state side.

I own genuine Wii svideo cables by nintendo. I imported them from Japan and they look much better than composite on older tvs. I'll sell them for a little less than I paid if a racket boy member is in need and messages me.

Yes, I own a set of them. You can buy them direct from Nintendo of America. You have to call them. Its not on their website.

The official ones look like any other Wii cables. They are grey, and simply end with a black s-video cable and a red and white audio cable. Nothing special really. I think they are 24.99 or something like that.
