I recently found a homebrew app for the Wii called Riivolution, which is essentially an on the spot game patcher. A community of hackers have been using it to create a slew of custom tracks for Mario Kart Wii, and some of the results are actually quite impressive. Here's a few good examples of what they're capable of doing.
GCN Rainbow Road
GBA Sky Garden
Whomp's Fortress
The package I used was obtained here:

It even has its own online play option, pitting you against other people using the hack, allowing custom tracks to be selected. I was able to quickly find and play against 5 other people. I think there's over 100 tracks in this package. Some of them are hit or miss, but trying them all out for hell of it is part of the fun. You supposedly dont need the Homebrew Channel, but I imagine having that makes things a lot easier.

Has anyone been able to patch Mario Kart Wii to use the classic or gamecube controller? I don't mind using the Wiimote for stuff but I found the controls for Mario Kart Wii to not be that good.

Installed this last night, I've been having tonnes of fun with it. Currently going through every single course sequentially and writing down a brief review of them so that I can remember which are worth playing and which aren't.

It's the wheel all the way for me. I'm not even a big fan of motion technology in general, when I play games I want to sit on ass and move as little as possible, but holy shit do I love the Wii wheel. I wish more games used it.
