PunchOut never gets old, there is something fulfilling about putting the beat down on bald bull over and over
Skyblazer is easy enough that a play through of it is relaxing
SMW for the same reason as Skyblazer
In The Hunt is just bad ass its metal slug with subs and just as much stuff blowing up
With Wario Land though the 6AA batteries give out before I do.
I can waste days away with any of those.

For me it's Half Life 2 and Portal, the Metal Slug series, and Mario Kart DS. I've been playing that at lunch with my coworkers for the past three years!

NES - Super Dodge Ball - Don't know why; I just love beaning people in the head.
SNES - Castlevania Dracula X - This is one of my all-time favorites, and I play it about every other month. EWJ 1&2 as well.
N64 - Goldeneye, Mario Kart 64, and Road Rash 64, WCW/NWO Revenge - All awesome games to play with or without friends. Also, played the hell outta NBA Hangtime and Wayne Gretsky's 3D Hockey

Jak & Daxter, Sonic the Hedgehog 2, Metroid Fusion, Metroid Zero Mission and Tekken 3 are 5 games I know I can play over and over.

An old thread that I had a hard time originally coming up with responses for, but that's cause I was trying to think of specific games. It really all just comes down to a specific genre though.
Just about any good beat'em up falls into this category for me. I played through Streets of Rage 2 on the Genesis and Ninja Warriors Again on the SNES many, many times. I used to force a friend to play co-op with me on Teenage Mutant Ninja Turtles Arcade on the NES like a billion times. He often seemed kind of bored with it and annoyed that I never wanted to play anything else, but the game was fun for me every single time. I used to revisit my local arcades just to keep playing The Simpsons Arcade or Teenage Mutant Ninja Turtles.
I've spent hours on certain installments of the Dynasty Warriors series re-playing stages ad nauseam, levelling up characters to the max. I've gotten all achievements in the Dishwasher Samurai games, and can easily see myself picking them up again on a whim just to beat the crap out of the some baddies again. I actually got a little upset when I started running out of characters to max out in Castle Crashers because I would no longer have a reason to keep replaying story mode. I'm currently about four trophies away from platinuming the PS3 version of Lollipop Chainsaw, which means I've had to replay the stages quite a few times after beating it, and I'm already thinking of getting the 360 version at some point in the future so I can do it all again. I actually got all trophies and achievements on both versions of Batman Arkham Asylum, in part because I just loved the damn combat system so much.
I find it odd that certain gamers find beat 'em up games to be repetitive and boring. To me, they are the opposite. The thrill of being surrounded by a group of enemies and beating the living shit out of them using just your fists, feet, or a good melee weapon never, ever gets old to me. There is no other genre that can call me back as consistently as beat 'em ups.
