This is my menu for the week (stupid no meat Lent):
Monday: Spicy Tofu Stir Fry with a sriracha and honey sauce
Tuesday: Zinfandel Pasta with broccoli rabe
Wednesday: Pad See-ew with kale
Thursday: Cauliflower Puttanesca
Friday: Texan's Migas
Saturday: Chinese Ratatouille
That was the working menu. Had the Spicy Tofu on Monday as planned, but switched some things up and had the cauliflower puttanesca last night. Going back on schedule and having the Pad See-ew tonight.
The spicy tofu was incredible. Went through about a half roll of paper towels to get the tofu somewhat dry. But an hour or so later, rolled the thick slices of tofu in panko, then pan fried it in a very light layer of chili infused oil. In a separate pan, you cook down a half bunch of kale with slices of red bell pepper, poblano pepper, diced garlic, and about a quarter cup of sliced onion. Cook that down, season, and add a touch of crushed red pepper. Cook a side of Udon noodles, and you have yourself a delicious, healthy, and filling meal.

Last night, I made Lasagna Soup. Pretty good. I made my own chicken stock the day before.
Tonight, I will be making Ultimate Stuffed Chicken Breasts with Ham/Cheese. I have made this many times before and it's always a hit.
A co-worker and I have been doing this thing where we make extra food and swap with each other. Yesterday, she gave me a quart of Fish Chowder. Tomorrow, I'll be returning the favor by giving some of these stuffed chicken breasts.
I'm interested in trying this Chicken Parmesan Casserole recipe. It calls for using croutons instead of breading/frying. Usually I butterfly the chicken, dip in flour, egg wash, and then fresh bread crumbs. I love chix parm so I would like to try this out.

I am making cheesy potato and bacon soup for dinner with a nice crusty loaf of french bread. Since it is raining cats&dogs where i am. for dessert i am having a fruit cup while foxhound gets ice cream.
