By the standards of Bioware combat systems it was fast and fluid. By the standards of games like DMC it was bland and boring.
I suppose they could do another KOTOR game, as the MMORPG just doesn't count in my eyes. I pretty much ignore any MMORPG installment in a single player focused series. I kind of hate their very existence (like Final Fantasy XI).
You have to count them for the updates to the story canon.

The gap isn't Bethesda vs Obisidan huge, haha, but yeah. Man I really hope Obsidian do something sci-fi again next. I think if they did a Deus Ex styled FPS that'd be perfection. Something cyberpunk would be perfect since we still see more space stuff thesedays.
Yeah that might be a stretch. The dialogue in ME3 has been a sigh of relief after stuff like Skyrim and other games over the last several months for me.
I'd say these companies aside, Ion Storm (well Deus Ex mainly) and Looking Glass Studios had some of the best writing as well back in their time. Incredible stuff there.
I haven't actually played any of the ME games, but it's worth noting that Funimation is working on an American-Japanese co-produced anime based on Mass Effect. I'm pretty sure it's going to be more of a side-story than anything else but I think it means that ME is not over yet.

Past that, I think they'll shelve it for a while. Second that an MMO doesn't seem likely, given SWTOR.
When they eventually return to it, it'll probably be (at least) the next console generation and (story-wise) separated from the first three by at least 20-30 years, possibly some extra zeros there.
I like the sound of that. Would be nice to see how the races are doing after a while, Defiantly the Krogans.
