It's definitely what I spent the most time doing. Though I did enjoy the main story mode, and survival is a hell of a lot of fun with friends. Trying to see who can survive the longest! Damn, I feel like playing it now.

Tried the Driver series. Although a lot of fun, I'm still U2 on this. The first person cam in the Driver series doesn't handle as well as I hoped, and you stay on city streets most of the game.

I'm going to recommend you Out Run 2006 Coast to Coast. Like in Out Run, there's only a time limit and it's very much about the driving without being a hardcore simulator. That said, it's a very involved game and there are very few straight roads, you will be drifting and turning the wheel all the time.

That looks like a game I need to add to my collection, but no first person, and it's more in an arcade style.

I think I'm looking for Gran Turismo, but you can drive down an interstate or a country road.

It's modern, but Burnout Paradise allows you to drive around aimlessly. It is not a simulator experience, as you can still build your boost meter and do all sorts of crazy jumps and wreck into buildings and other AI vehicles (just traffic, not racers.) To me it is very similar to SSX3 where you can conquer the mountain but opt out of races or events depending on a path choice/button press. I have only raced or chosen events a handful of times, but I can drive Paradise City for hours and still get lost. Love it.

You can actually change the view to first person. But it's very, very arcade. You will be drifting perpendicular to the road
