I tried to play through MGS for my Summer Gaming list last year. I really didn't get too far. And I really wasn't very good at it. I feel like I like the idea of the MGS series far more than I like actually playing it. For instance, I thought the first game was crammed with really great Cinemax-style action movie dialogue, cool artwork, excellent music... but ultimately the gameplay for me resulted in something very similar to the OP. I'd usually watch a long cutscene, gain control of Snake, have no idea what to do, get killed by something, repeat. A lot of times I'd really only be playing the game for a minute or so at a time before screwing up. I've yet to finish the first game, and never played any of the sequels besides Ghost Babel.

You really don't have to be stealthy unless you want too and play on the higher difficulties. No "Holy Christmas Fisher" game overs too if you're caught or anything!
Hehe, when I first played MGS3 I pretty much killed 90% of the people I came into contact with. They just gave you so many awesome way to kill people! That river scene took forever LOL. But after I beat the game, I wanted to play it again, so I did. The second time around I opted not to kill anyone, the river was a lot shorter!

I like Metal Gear Solid games because they mess with your head. They just do things in such a unique way that I never get tired of it. I remember years after I learned how to get Meryl's codec I was sitting there, frustrated and a little annoyed, when I just happened to look at the box and I sat there dumbfounded for a second. It's in the re-release's manual.

The actual gameplay in subsequent games only gets better. I had mostly watched roommates play MGS, but actually played through MGS2 myself when it came out. When I tried to go back and play MGS, I had a hard time playing it as well.

You might want to give one of the later titles a shot. Twin Snakes gives you the first person camera from 2 in the first game as well, which helps immensely IMO.

I mean, it's not on the artwork of the PS2 re-release.

Oh, yeah, that could be a pain.

One thing I wondered but haven't checked, if you play MGS on hard difficulty, do the characters still refer to the radar despite it being disabled? Or does the game just play as normal and the radar is jammed the whole time?

I think the dialogue is changed to remove references to the radar, and the radar itself is completely gone.
