Use bootcamp and grab the GoG release.

Haha, I read the thread title thinking "How's a modern person supposed to play Fallout 1 on a Mac?"
Then I started thinking how should an antiquated person play Fallout 1 on a Mac.

Sheepshaver, or some other classic Mac OS emulator maybe? I dunno. I originally played Fallout on a Mac too, but have multiple PC copies of it now thanks to all the bargain bin bundles. Then again I also have a G4 with OS 9 on it, just in case
It might be easier to just go with the Windows version and find a virtual machine (or dual boot) to use that.

You could always snag an old Windows 98 or 2000 off of Craigslist or something for $25-$50.
