Beatmania IIDX (19: Lincle)
Dance Dance Revolution (preferably either SuperNova 2 or X3)
Neo Geo MVS (with Metal Slug 1-5)
SegaSonic the Hedgehog
Space Harrier (deluxe, moving version)

Too bad SegaSonic the Hedgehog is ridiculously rare.

For me it would be the arcade cab that have all the alpha series and daytona usa.

Was Soul Calibur released for arcade? I'd assume it was a NAOMI release if so. I know that Soul Edge was, as I've played it. (I would not suggest getting Soul Edge.)
Not to sound mean but duh, what made Soul Calibur so mind blowing when it came out on the Dreamcast was that is arcade perfection and some argue a little better than the arcade version in some ways (such the DC version had full 3D Backgrounds).

Segasonic the hedgehog - I've always wanted to try this game.
X-Men arcade 6 player - This thing is just awesome.
Bank Panic - No good home release

Well, there are certain mandatory games. I'd need at least one Konami beat'em up, one Capcom beat'em up, and one Capcom fighting game. Let's see, I guess I would choose

Armored Warriors
Mega Man Power Fighters
Sonic Arcade
Random SNK fighting game, maybe one of the Last Blade games or Fatal Fury Mark of the Wolves
X-Men vs Streetfighter/Marvel Super Heroes/Marvel vs Capcom - Can't decide which

Time Crisis II
Mortal Kombat II
Teenage Mutant Ninja Turtles

Dance Dance Revolution - Not my cup of tea, but other people would love it. DDR has become such an iconic part of arcades I'd want to have one
Crazy Taxi - Another one I think any guests I have would enjoy

Any Konami or Capcom sidescroller or beat'em up not on this list would also be a good candidate. Those two companies made up so much of my arcade experience years ago
