This isn't something I've thought a lot about, so I'll have to get back with a more well thought out answer later.

But for now, off the top of my head, Bioshock stands out to me as very good.

Your dreamcast must be wayyy nicer than mine with those graphics.

Both Sonic Adventure opening levels blew my mind. Playing as Sonic running while Killer Whales jump above you will always remain awesome.

LOL, when I first popped in Sonic Generations I was like "please have that level, please have that level." Needless to say I was thrilled to re-experience it in HD.
