If we're talking VMU beeps -- I have a few games with odd beeps when they save/load stuff:

Air Force Delta -- makes a real FUNNY beep when accessing data. Bee-EEP! Almost as if the pitch changes a bit.

Giga Wing -- 3 short beeps. Beebeebeep!

It never seemed to take off, but there was a bit of a VMU homebrew scene happening at one time...

some football games used them to choose plays secretly.
This was really great use of the VMU!

Another really cool use of the VMU was in Power Stone 2! You can create your own little treasure box with 3 or 4 pre-selected items of your choosing. During battle, instead of a treasure chest appearing during battle, an oversized VMU will spawn onscreen that can only be opened by the user, when reaching for it the the cap on the VMU comes off and one of your pre-selected weapons will pop out! :)

Wasnt there a game where you could train your fighter to be stronger.
I think the game was Street Fighter Alpha 3. Take you character and run him through World Tour Mode.

In Marvel vs. Capcom 2, players can trade unlocked fighters by connecting 2 VMU's together.

Power Stone 1 had three really fun Mini games to play on the VMU!

I know in Resident Evil it would display health,
I also think some of the resident Evils on DC also indicated available ammo on the VMU. That's why i enjoy the resident evil series on Dreamcast
