Honestly, I figured I was probably the only one around here that does carry a knife and/or a gun on my person.

I carry a fairly versatile knife. I like the fact that it is a Hawk Bill/Karambit
blade so it has that extra sharp point for package opening or for piercing material. Also its got an extended tang and doubles as an impact device.

I also carry a neck knife purely for self defense, nothing more:

As for kitchen cutlery I use Wusthof knives. They were pretty cheap IMO when I got a whole set at Costco awhile back and they are amazing. I'm a bit over protected of them, I would use them if I were to cook something nice or if I have company over (kinda like busting out the good china). If not I use cheap crap from Ikea to get the job done.

What do you mean by cheap? $300-$400? Henckles and Wusthof both have lower grade lines that are crap. You want a good carbon steel knife that has a long tang and has some heft.

I have some Henckles steak knives that were a wedding present. They had plastic handles, thin blades, and were just a little bit better than the junk knives you normally buy.

Here are some examples of junky knive sets: link1 link2

Here's a better knife set

I probably spent around $500 for my 2 paring knives, 3 chef knives (6", 8", 10"), boning knife, carving knife, knife steel about 15 years ago. These were purchased individually and they're almost as good as new.

As long as you don't put them in the dishwasher or chop on a granite/steel counter, they don't need much protection. Just use them. You should use a knife steel to maintain the blade sharpness. After awhile, you'll need to sharpen the blades.

I never seem to save my knife pics, but here are some of my more recent shots.

Becker BK7 that I stripped the coating off of, and then convexed the edge. Crazy sharp for a knife that's 3/16 of an inch thick. This one usually goes with me on camping trips, since it's heavy enough for light chopping, but sharp enough for finer tasks as well.

Here's a Buck 110 on top of a H&R 12ga. The shotgun was actually used to take a couple deer while my dad owned it. As far as the Buck, the only blood that's been on that blade is my own.

This is the main knife I use in the kitchen, an Old Hickory Butcher knife.

Here are two knives that I frequently use at work. The one on top is a Menefee Zulu Trapper, and the bottom one is a Buck 301 Stockman.

Wow thats an awesome looking knife, is it legal to take around? Iforget what the limit of the blade is to be able to carry.

Ohh god no not that expensive. I picked up the block set at Costco maybe 7 or 8 years ago for about $220. Maybe with inflation it would equal out but I will get a picture up of the knife set during the weekend. All I know is that they cut silky smooth pretty much anything with little effort. I don't know too much of kitchen cutlery. And yeah your right, I should just enjoy them and use them regardless. I use knives on a large wood block.

The blade on the folder is 3 inches exactly and the neck knife is 3.2.

Now laws: from what I gathered in NY State it has to conform to 3 basic things:
1) No Auto knives (google what they are for a better idea)
2) Less than 4 inches
3) concealable
Downstate (5 boroughs) are even stricter with the laws but I wear a suit. Not to be stereo typical here but a dude who looks like some hoodlum with a hoodie that doubles as a night gown and a fitted hat that's two sizes too big has a higher chance to be searched than a guy with a suit, hypothetically I think. As long as you don't wave it around like one does with a cell phone or iPod you are in the clear.

Becker BK7 looks awesome because its got that Damascus steel Look to it.

The Buck 301 is cool because I'm a big fan of versatility.

casterofdreams,

How sharp is the point on that Micro Plain? The Besh Wedge has always intrigued me, but I haven't been able to handle any knives that use it.

All right. I cave. Here's a picture. Nothing impressive and mostly for show.

Sharp out of the box but it can take a beating. The tip is where all of its bite is. The actual edge you can cut twine or rope but it won't be a replacement to a normal edged knife. It's a single purpose knife: for self defense. I've never used it in that way (thank god) but I've gone through a few Sheetrock walls with it and it held its edge at the tip, but a little tiny chip. I think Sheetrock is a bit harder than thick clothing like leather, which the Micro is designed to pierce through.

I got it for $20 and for what its worth, with its ease of carry, I'd say go for it if your on the fence.
