The only knives I have are my good kitchen knives. I've had them for around 15-20 years and they still work great.

Except for my siblings, all of my relatives have crappy knives. They don't know better. Whenever I go over their house to do the cooking, I must have my knives with me.

My favorites are the 6" & 8" chef knives. Most of them are Wusthoff with some Henckels and other brands in there.

Obviously I'm a big fan of Wusthof knives, but JA Henckles makes a decent chefs knife. Hard to pick a favorite, but I'd say either the Wusthof paring knife or cleaver is my #1. The paring knife can debone a chicken without any issues (although that's a big no no as it will eventually ruin the knife) and the cleaver can cut just about anything from a whole head of cabbage to a sliver of ginger.

edit* Notice all the knives are full tang. Makes a huge difference in durability.

I use my pocket knives for random stuff at work. They also come in handy for opening envelopes, trimming fingernails, whittling or carving, opening those stupid blister packs, cutting up food in place of the crappy restaurant knives, etc.

I don't carry 20 at one time, if that's what you were thinking. I usually pick one, carry for a while, then switch to another one.

Luke, those are some nice looking kitchen knives. How are they as far as edge holding?

The edge holding is superb with Wusthof. I know the standard rule is to hone and sharpen your knife regularly, but with these knives, that would be a disservice to the knife. I probably hone and sharpen my knives twice a year, using wet stone. And although I've been honing and sharpening knives for well over a decade, I still screw up a blade once in a while.

A sure safe way to not mess up a nice knife is to actually ask your local butcher if he'll sharpen it for you. The guys at my local Fresh Market are more than happy to hone and sharpen my knives at no cost, and they do a damn good job. And although most butchers use fairly cheap knives, you could shave with any of their blades.

The knives pictured are a few of my favorites, luckily I have dozens more including the ones you mentioned. My bread knives are made by Cutco, which I thought was a pretty cheap brand. Turns out they're pretty kick ass.

The double handed knife is for cutting pizza and chopping large pieces of smoked pork shoulder. That thing is older than I am, and it hacks and chops like a machete. Not dull, not sharp, but it gets the job done with efficiency.

Cutco is top quality, and I'm not just saying that because my girlfriend used to sell them. :P

If it ever gets dull, they have a guarantee on all their products. They will either sharpen it or replace it for free. Remember that.

Luke,

Cutco actually surprised me with their quality. I still believe they make one of the best filet knives out there. It's just unfortunate I find their business practices a bit shady.


After thinking it over a bit, I'll have to make out a list to see if I've actually owned as many knives as I said earlier. I know I've had a lot, but 150 sounds a bit much..

Those are a couple of great knives, and will probably do everything you need of a knife. I envy you one or two knife people. It's probably a lot easier to choose which one you'll be carrying for the day.

Whoa. I had no idea the santoku set I got as a gift was that pricey. They really are great knives, but I made the same mistake earlier with Chicago Cutlery and just wrote off Cutco as "cheap knives".
