Even though it doesn't support the analog stick, I will always appreciate NFS3. Maybe because it was the very first game I ever owned.
Then there's Ridge Racer Type 4 which has held up very well in my eyes.
Gran Turismo is a nice example of how good gameplay doesn't get old.
F-Zero has definitely aged well, simply because it used the available hardware to its fullest potential.
That's all I can think of right now.

Haven't had time to read the whole thread, but I think Jet Moto on PS1 is/was a great game. Never played the sequels. Still holds up today, I'll buy it if I ever see a cheap copy in the wild.

Lots of love for F-Zero here and I will have to echo that -- as a SNES launch title I got that and Pilotwings the day after I got my system.

Whoever mentioned Midway Treasures 3 -- nearly every game on that collection because they're all racing games.

Battle Gear 2 for ps2 (2001)
Get me a racing cab of this game* on a deserted Island and I do not want to be saved.

It has to be Battle Gear 2v (has the tracks of part 1 as well!)

I still play GRAND PRIX on the Atari 2600 for hours on end. Speaking of the 2600, I used to love Night Driver, but I have seemed to have lost all skill in playing it.

Also love Super Hang-On, but can rarely get far in the game unless I play Arcade Mode.
