I'm afraid that is just how the n64 rolls.
The texture filtering is fuzzy. The fuzz is most noticeable textures that are mostly one color because they don't have any details to hide the fuzz. They are just a plain background for the fuzz to show up on.
The n64 also attempts to smooth the edges of its polygons, but the n64 is so low res the smoothing looks more like chunking.
Using composite can hide these to problems a little, because composite is such a blur fest on its own it hides the n64's problems. Personally I use s-video for the better sharpness and color anyway.

Are you using s-video for your snes? If not you could try it out using your n64 cord if you want. S-video can make a lot of difference.
