I've had no luck with anything off ebay or amazon; I get the black and white output that is all fuzzy (not the only one).
This is the one I bought before:

Anybody have a resource that has s-video cables that work?

If you're handy enough to do it, or know some one that is, you can just tap the pins on the multi out and add your own S-Video and RCA audio jacks to the back of the console then just use standard S-Video and RCA cables to hook it up to the TV.
Some VGA boxes, such as the one in the Racketboy store, will give you S-Video and composite out.

With that, you can just use standard S-Video and RCA (for audio) cables. I'm sure you can find other brand boxes on eBay, but just know, I don't believe they all supply composite and S-Video.
The benefit of these two options is that you can select some cables that DON'T suck. All the current third party cables that are out there for retro game consoles today really suck. VERY thin wires, very cheaply made.

I had to buy official ones to get a decent one. You could try what Ziggy said, or buy a VGA box.

Another vote for the VGA box. This gives you more versatility with VGA and SVideo/Composite for non VGA games.

Absolutely go VGA, I think they cost $27ish and honestly, i'd put it above the GCN component cable upgrade which sells for $100+ now. Def. do that - you will not regret it (make sure your TV has an input for the stereo jack though - some older TV's don't).
If your set on S-Vid - pm me, you can have one of mine, I think I have at least 1, probably 2 spares that you can have for cost of shipping.
