Generally you get a couple parts machine and pull working parts until you have a working machine. Some parts you can repair if you're handy too. You can flash new rom chips, you can still get new 64k drams, you can replace leaky electrolytic capacitors, etc. Keeping these things in working order is half the fun of the hobby.
For the most part though, this stuff is pretty durable. Think about how reliable the Atari 2600 is compared to todays consoles. The biggest weakness is storage. Floppy drives have moving parts, floppy disks are no longer being produced. Fortunately people out there are designing flash devices to replace floppy disks. So these things should be usable for decades to come.
Also, for all the computers I have up and running, I don't really use them for anything productive. Just games.
