Dont know if its really stunning but I really like the 2D artwork in the Saturn game Astal.

The sounds, the artwork and its old-school charm really brings it back to an olden times of 90's gaming for me.

I also really enjoy vanillaware's artwork! Odinsphere, Muramasa, Grim Grimoire and the upcomming game Dragons Crown. make me want to play it on the VITA when it comes out in the USA!

Oh, it is so gorgeous. I even had non-gamers remarking on how visually lickable it was whilst I was playing.

Folklore
Final Fantasy 13
Beyond Good and Evil
The Sly Cooper games
Brutal Legend
Castle Crashers
3D Dot Game Heroes - Not a pretty game, but the art style is distinctive and memorable
Viva Pinata
Mark of Kri
Darkstalkers
Earthworm Jim
Megaman X - I liked the new cyberpunk, anime look
Dead Samurai Vampire Smile - Nice, gritty, bloody, futuristic, surreal looking game
Flower

Might seem an odd choice, but Ninja Gaiden II on the 360 is beautiful, particularly the first stage

I thought that one was too obvious

I also want to nominate Ghostbusters on the 360. On an HD set, it's one of the most amazing looking games this gen and when things start getting otherworldy and supernatural the game does start to shine artistically
