I'm going to have to say the PSP version of FFII at least was a lot more inviting and enjoyable than the PSX/GBA versions. I didn't play much of those versions, just because I wasn't feeling it. But I beat the PSP version recently, it was well balanced and a lot of fun. I think it might have had some tweaks again over the PSX/GBA versions, but don't quote me on that. FFI I'm not sure about, I imagine the PSP remake is cool though. I beat this one on both the PSX/GBA versions though since it's just so short and easy. Can't really go wrong with this one I guess.
I think both PSP releases can be found for like $10 new online.
