Doom on the PC has always had co-op. On the Xbox you can run Odamex, a Doom port that supports co-op.

I used to play Doom co-op over a null modem back in the day.

PS2 Raiden III
Two Player Co-Op or for more intense gameplay, control both players with one Dual Shock. 8)
