most these countries started to eat and notice bugs as source of food, mainly because of famine through out various wars. China with the revolution, Cambodia and Vietnam during the Vietnam wars. As time pass and the countries stablize those types of insects are just found their way back into the food culture over there.
That's how a lot of unique local cuisines get started.

That stuff is expensive. If you eat the fish at a restaurant in Japan, it's generally quite safe as the chefs need to have a specific license to serve the fish. If someone dies at their restaurant, their career is pretty screwed.
Ha! Yeah. I saw a show where a guy went with his friend to eat some. The chef put out a small feast of various fugu dishes and sat right next to the guy the entire time he was eating. I didn't see a phone, but I bet the chef had one in a pocket somewhere, with the paramedics on speed dial, just in case. That's dedication right there. And I'll take the prospect of a potentially poisonous fish over an insect any day. Though, after giving the pictures a second glance, I might be tempted enough to try the wasp cookie. That's a awfully big MIGHT, though. :?

I've definitely had some fresh salad from the garden and by the time i got to the bottom of the bowl had found insects and or parts. It doesn't bother me much though. At least they weren't crunchy.

You're supposed to soak the vegetables in water for a few minutes before you use them. That gets rid of the bugs.

Not soak, but do rinse all fresh fruit and veggies. There are plenty of pesticides on all fresh fruits and veggies, and although they might be small in amount, remember the fact that if it wasn't for sprayed poisons, we wouldn't have fresh produce.

Be especially careful with greens, as lettuces and leeks are full of dirt, sand, and bugs. You can get a salad spinner "real low cheap" almost anywhere, and is a wise investment.

Speaking of fruit, you can toast watermelon seeds just like pumpkin seeds. I guess you can toast anything, but these aren't half bad.

I always wash stuff, but some bugs hang around regardless.

Yup, lettuce folds like to hold onto things even when rinsed individually and baking potato skins (where the vitamins are) always seem to hold onto a little dirt no matter what you do.

I don't think I'd eat any of those except for the scorpions. I've had crickets before and they are okay I guess too. I might try the grasshopper but they've always creeped me out. I just don't care for the crunch most insects have.
