Soo, I just went to my local trading company store and I got really lucky and saw two special edition game boys. I decided to treat myself and picked them up. They're pretty awesome if you ask me.

That's a sweet collection! IMO you're done; but don't let that stop you from buying a Gameboy-comaptible sewing machine if that floats your boat.
I'm totally envious of your Pikachu gameboys. I've wanted one of them for years and never had the chance to pick one up.
I've wanted to get one of my DMGs backlit by a professional for a long time, but I can't bring myself to let someone drill holes in my mint-condition original gameboy. The other two that were given to me are so badly damaged that it'd be a waste (tho they do still function as secondary instruments in my LSDJ compositions).
I'd say there's nothing else to get - at least your collection puts mine to shame. Congratulations!
Boxes get in the way of you actually enjoying or viewing your collection - fingerprints too if you're one of those way-too OCD people that can't actually touch their possessions.

I used to have a boxed Pikachu GBC that had Poke-yellow as a pack-in. Just not a big enough to Poke-fan to hang on to it.
