I remember having a lot of fun with Stunt Island. I don't know how well it's aged but it might be worth checking out. Definitely fairly unique for the time.
Back to the adventure games for a moment--Goblins Quest series was good, as well as Kyrandia.
On other fronts: X-com, of course, Relentless: Twinsen's Oddysee, Serf City (aka Settlers)...

...and I just did. My brother reminded me of a god game we had TONS of fun with: Ultimate Domain. Definitely check that one out. It's sort of like Populous with a turn based multiplayer that can be really fun.
I second the vote for Elder Scrolls:Arena
Darklands, one of the best RPGs of all time. The sheer scope of it is still amazing by todays standards.
And ofcourse there is always Humans - caveman puzzle solving.
Tons more, thats just what I've played in Dosbox in the last year or so.
Elder Scrolls: Arena/Daggerfall I would personally avoid though. A really bland, personality-less world. Randomly-created (read: poorly) dungeons. I remember the depth of sadness after I used a few months of allowance on Daggerfall on its release, after realizing it sucked hard...
I just had a flashback and remembered a game called Tunnels of Armageddon which by pure coincidence I JUST played in DOSBox yesterday. I second Stunt Island. There was so much to do in that game it was amazing.
Keep in mind that a lot of the later adventure games, particularly KQ6, had both Windows and DOS versions and the DOS versions were far inferior.
