I am a Nintendo fan so these will be biased, but if I am remembering correctly;
Many sports games used it for statistics or calling timeouts
Kart Fighter used it to switch from punches to kicks
Vice Project Doom used it to switch weapons
Maniac Mansion used it for a plethora of options
Zelda used it to hard pause (start brought up the inventory)
Metal Gear Solid used it for the communicator
The obvious use in Double Dragon, Bubble Bobble, and Contra on the NES for selecting second player/other game options (though that should have just been down)
It really was just an extra button that got used when you did not have enough buttons. Why it is on the dual shock is a good question.

Well here is the answer back when nintendo had the snes and sega was launching the sega cd and there was the turbo duo, grafx cd addon. Nintnendo made a deal with sony to make a cd addon for the snes but I dont know what happened I think it was the employment of the super fx chips. Anyways long story short they made a deal with sony about the name and the machine and sony had to wait a couple of years to throw the machine in the market and obviously they did and bam the rest is what you know in this days. So basically the playstation is the evolution of the snes.
