Move canceling can be hard. And it's not something you can do to any move. For example, in Street Fighter 2 if you do a crouching Fierce in the middle of a fireball move and do it right your uppercut is shortened and you immediately throw a fireball after it. That's a simple cancel. Others can be much more complicated.

In MSH there are certain moves you can cancel into other moves if you are skilled enough. Some FAQs should be able to show you what you can do.
