Congrats with your new tv!
As we all know HD content looks awesome on HDTV's! but SD content sucks. Specially videogames! The best way to make your old videogame consoles is to get the best feed from the console to the tv.
For the Dreamcast use a VGA box, for a PS2 and Wii use component cables, for anything older try getting RCA cables.
The second option is a little pricey but if you want to you can get an upscan converter like the XRGB-2 and upscale stuff to 1080P. Consoles like the SNES look awesome when using it.

Even though sony pisses me off by taking away my otherOS on my ps3, it comes down to what looks like at a good price on my TV... even if i totally banned myself from buying a sony tv, its really not going to hurt sony in the long run...

They did. Those HD CRTs can display stuff at its native resolution. The nature of LCD and Plasma technology does not allow this. However, if you're going to buy an HDTV new you should seriously consider Plasma. SD stuff will look much better on it than LCD. Not to mention that Plasma is superior to LCD in almost every way.
I was writing a complete home theater guide but the it was getting really large, too advanced, and people seemed to have little interest. Once I'm done with papers for the semester I might write mini guides that cover HD technology, Surround Sound systems, and video components, if anybody would be interested.

Sorry for bashing Sony, but in general Sony tends to price their electronics very high. I have seen Sony cameras of similar specs priced higher than Canon and Nikon. Now I don't much about cameras, but I do know that Nikon is probably the best you can buy.

I'm going to second this. I got an XRGB after getting my HDTV and the difference is night and day. Not only does the upscale in B1 (linedoubling) mode look great, but there's also almost no lag. B1 gives you exactly one frame of delay, which is good enough that I can play Guitar Hero 2 on my HDTV without having to touch the calibration settings (and anyone who's used those knows that things quickly become unplayable because of visual/sound mismatch). Plus, the XRGB takes in two separate composite and two separate s-video connections (so four separate audio streams to match) so you can get several consoles plugged in at once. I want one. I still use old TVs, I've got 3 of them in the apartment, lol. One in the living room, one in my mancave, and one in the bedroom. I really want and HDTV, but they're still so freaking expensive.
