My wife asked me a question about ebay that I couldn't answer, so I'll ask you guys.
She bid on a purse that she swore ended Sunday, then it was changed and supposed to end this morning, now it is saying the auction ends on Wednesday. My wife is the highest bidder around $25 and the buy it now price is $50. She thinks that the seller keeps extending the auction to get more bidders. I didn't think that was possible, or if it was she should have been given some kind of notice.
So my question is - can an ebay seller keep pushing the auction back so that it ends at a later date?

It was my understanding that couldn't change anything about an auction once it had a bid on it.

Best thing I can think of is to screen-capture the page with the end-date, and if it changes again, at least you have the proof the seller keeps holding out so you can file a dispute with eBay..

I've been using ebay quite a lot for many years now and never seen such a thing happen.

I tried to sell something cheap, and was going to change the price while I was updating. Someone bid on my item in about 15 minutes. I found it suspicious because she was going to re-sell it at a much higher price. So if I have to deal with "ebay re-seller", im not going to sell it to them all... only to other buyers.

I'd love to go off on you for being an asshole ebay seller but I will just say that what you did wasn't right. If you don't like how ebay works, then don't use it. You can shorten the item time, can move a buy now to an auction, but I do not believe you can lengthen an auction. Perhaps the seller had (2) of the item? One w/the sunday end date, one w/the Wednesday end date, and bid on the other? I've done something similar to that.
Additionally, a seller can end an item immediately and sell to a high bidder. The reality is, any seller if unhappy with final sale price can opt to not ship the item - they still pay the ebay fee, but they may think a neg. feedback is worth not "losing" money. That's why the neg. feedback is still important.

I have NEVER heard of that before. I've been bidding and buying from ebay for 10 years and never saw anything like that. I would take the screen capture advice and report it. This is the part of auction sites that I hate, crooked sellers!
